What You Will Need:
Rack of Lamb. We’re using Aussie lamb for this simple and delicious recipe, but only because it’s the best, and we picked it up at a local grocery store. Also, using grass-fed Australian lamb requires less cooking time.
Vegetables. Here’s the thing about building the perfect Sheet Pan Lamb Dinner for your family: you can fill it with all of the veggies everyone likes, so the variety is limitless. Just make sure there’s plenty of delicious Aussie lamb to go around.
Potatoes. I used both red-skinned and russet potatoes; just cut them into smaller pieces so they’re done when the lamb is done. If you are using more substantial pieces, cook them first, then add them to the sheet pan.
Seasoning. There is also a lot of room for customization when it comes to seasoning. I used garlic pepper and Old Bay seasoning, but use whatever seasoning makes you smile.
Oil. I used an olive oil-canola oil blend for this recipe, but just about any cooking oil will work. I also love using walnut, coconut, and avocado oil.

Aussie Lamb Sheet Pan Dinner Recipe
serves 4-6
Ingredients:
- 1 package Aussie lamb rib roast, cut into single-bone sections
- 4 tablespoons canola and olive oil blend, divided
- 2 tablespoons garlic pepper, divided
- 1 tablespoon Old Bay seasoning, divided
- 1 to 1 1/2 pounds baby potatoes, halved or quartered
- 1 medium red onion, sliced
- 2 small heads of broccoli, cut into florets
- 2 medium zucchini, cut into thick quarters
- 2 each red, orange, and yellow bell peppers, cut into large pieces

Directions:
- Preheat the oven to 375°F.
- On a clean cutting board, place the Aussie lamb rib roast and use a sharp knife to divide it into individual single-bone sections. Place the lamb into a large bowl. Add 1 1/2 tablespoons of the oil, 1 1/2 tablespoons garlic pepper, and 1/2 tablespoon Old Bay seasoning. Toss until the lamb is evenly coated.
- Place the potatoes in a separate large bowl. Add the remaining 2 1/2 tablespoons of oil, 1/2 tablespoon of garlic pepper, and the remaining 1/2 tablespoon of Old Bay seasoning. Toss to coat.
- Spread the potatoes in a single layer on a large sheet pan. Place the sheet pan into the oven and roast for 10 minutes.
- While the potatoes cook, place the broccoli, onion, zucchini, and peppers into the same bowl used for the potatoes and toss to coat in any remaining seasoning and oil.
- Remove the sheet pan from the oven. Add the remaining vegetables and the seasoned lamb to the sheet pan, arranging everything in a single layer so the vegetables roast rather than steam. Because sheet pan dinners should come out looking like dinner, not a crowded parking lot.
- Return the sheet pan to the oven and roast for 35–40 minutes, or until the lamb reaches your preferred doneness and the vegetables are tender and lightly caramelized.
- Let the lamb rest for 5 minutes, then serve.

What Temperature Should I Cook The Lamb To?
To help you feel confident, cook the lamb to 125°F for medium-rare and 135°F for medium.
Use an instant-read thermometer and check the thickest part without touching the bone.

Absolutely. Vegetables like Brussels sprouts, carrots, asparagus, green beans, or sweet potatoes work well in this sheet pan dinner.
