I really wish you had included in the recipe to pour out the water before returning the peaches to the stock pot. Maybe it seems obvious to you but I made it and was thinking it was way too much water, *then* I watched the video and saw that you put the peaches in an empty pot. So I just wasted my time and money making soup.

This recipe came together nicely and was loved by all! I didn’t have arugula so I substituted mixed greens. A nice alternative to traditional pasta salads, I’ll definitely make this again.

In reply to Nancy. Hi Nancy- you add both sugars! Great question. And the reason why is to infuse the thyme and lemon zest to help bring out the thyme/lemon flavor. An alternative option is to skip the oven, but still put those same ingredients into a small bowl and rub the mixture together for 1-2 minutes. Rubbing the zest into the sugar breaks open the zest to release the oils.

Hi – what’s the purpose to “bake” the sugar, thyme and lemon zest? It’s not clear – do we mix in both sugars? Thank you.
