Summer is strawberry season, and with so many strawberries from North Bay Produce, we’re putting them in everything!
If you love a good Cobb Salad, this is a great salad that eats like a meal.

Strawberry Cobb Salad
Unlike many salads, a Cobb Salad is not a light salad; it’s packed with three proteins, four if you count the avocado.
Adding fresh summer Michigan strawberries is an excellent way to create a visually appealing salad.

Strawberries always remind me of summer, and I am sure I am not the only one.
Like so many, back in the day, I also experienced my fair share of family outings to strawberry fields and lots of berry-stained fingers!
And one of my all-time favorite summertime recipes is my mom’s famous Strawberry Shortcake.
Strawberry Shortcake is one of those summer treats I could never get enough of, and that’s still true to this day.

What You Will Need
Strawberries. This salad is all about fresh, juicy strawberries, especially Michigan strawberries from North Bay Produce. I
recommend using medium-sized Earliglow strawberries. Aroma, Diamante, Earliglow, and Rosa Linda are other great strawberry varieties.
Lettuce. I used Red Lettuce for this recipe, but other crunchy varieties, such as romaine, Bibb, Iceberg, and Endive, will also work.
Tomatoes, avocados, cucumbers. When it comes to cucumbers in my salads, I prefer English cucumbers. First, they are less bitter, and second, the seeds are smaller than those of regular garden cucumbers. And, of course, you can’t have a good Cobb salad without avocado. I slice the avocado into nice, chunky pieces, making it easy to pick up with a fork. I like Haas avocados, but any ripe, firm avocado will do.
Hard-boiled eggs, Thick-Cut Bacon, and Chicken Breasts are the trio of proteins that make Cobb salads so popular and filling. I love soft-boiled eggs, but do you?
When it comes to bacon, I always prefer thick-cut bacon. As for chicken, I prefer using the breast from a rotisserie chicken.

How to Make a Strawberry Cobb Salad
4 Servings
Ingredients
- 1 large head of red lettuce, chopped
- 6 large strawberries, sliced
- 4 medium vine tomatoes, quartered
- 4 strips of crispy, thick-cut bacon, cooked and chopped
- 1 cup of roughly peeled cucumber, cut into chunks
- 1 cup of chopped cooked chicken
- 4 hard-boiled eggs, chopped
- 2 avocados, diced
- 1/2-3/4 cup of crumbled blue cheese (optional)
- Blue cheese or ranch salad dressing
- Kosher salt and freshly cracked black pepper, to taste

Directions:
- Rinse and pat dry the lettuce. Shred the red lettuce or your preferred lettuce variety and place it in a bowl. Set it in the fridge to chill.
- Remove the stems from the strawberries and slice each berry into smaller pieces. Set aside.
- Roughly peel a small cucumber and cut it into 1 cup of small chunks.
- Debone a rotisserie chicken and cut the breast into chunks. Measure out 1 cup of chicken.
- Quarter four vine tomatoes, and set them aside.
- Fry the thick-cut bacon until crispy, then place it on a paper towel to absorb excess grease. Chop the bacon using a sharp chef’s knife. (You can also cook the bacon in the oven.) Set aside.
- Boil the eggs (about 10-12 minutes), cool in ice water, peel, and chop. Set aside.
- Peel avocados and slice them into chunks.
- Remove the chilled lettuce from the fridge and begin building the Cobb salad in layers into a clear glass.
- Begin with a tablespoon or two of salad dressing, then add shredded lettuce, tomatoes, cucumber, avocados, bacon, hard-boiled eggs, and chicken. Top with strawberries, lettuce, bacon, and salad dressing. If you plan to use blue cheese, add some to the top. Season with kosher salt and freshly cracked black pepper to taste.
- Serve.

I highly recommend deboning and using the chicken breast from a rotisserie chicken; this way, you don’t have to cook the chicken, which saves you a lot of time.
Using a rotisserie chicken is an incredible hack when dinner needs to get on the table fast!

Red lettuce works excellently in our Strawberry Cobb Salad. However, use your favorite lettuce varieties, such as Bibb, Romaine, or Butter.
I also love mixing arugula, kale, or baby spinach into this super-easy recipe.

What’s in a Cobb Salad?
A Cobb salad includes proteins such as eggs, chicken, and bacon. Fresh vegetables include lettuce, tomatoes, cucumbers, and other greens, such as chives or diced zucchini.
You can also swap out the chicken for turkey or duck breast.

Can I make this Strawberry Cobb Salad a day ahead?
I recommend prepping all ingredients at least 24 hours before, then storing each component in a separate container.

How long will the Strawberry Cobb Salad keep in the fridge?
Our Strawberry Cobb Salad will keep in the fridge for one to five (1-5) days, depending on the freshness of the ingredients when the salad is made.
I don’t like red lettuce; what other greens can I use as a substitute?
You can use Bibb, Romaine, Iceberg, or Butter lettuce.
I also love mixing baby spinach, kale, arugula, bok choy, or pak choi.
I am allergic to strawberries. Can I use another berry?
Of course, summer berries, such as blueberries, blackberries, and raspberries, are also tasty choices. Or use stone fruit like peaches, plums, or apricots.
A ripe, sweet mango is a great option, too! FYI.

Can I make a Strawberry Cobb without using meat and eggs?
Of course, sliced chunks of marinated tofu are a great meat-replacement option, as are vegan cheese cubes.
Replace pork bacon with a vegetarian variety.
How many calories are in a Cobb Salad?
This Cobb salad recipe has about 462 calories in it.
Depending on the type of dressing you use for your Cobb salad, you will need to adjust the dressing’s calorie count accordingly.

Dressing on Cobb Salad?
As for a salad dressing for a Cobb salad, use whatever you prefer.
I love a good blue cheese or ranch dressing. A red wine vinaigrette is good, too!
