With Spring just around the corner, I am thinking it’s a good idea to get myself geared up for warmer weather. And nothing makes me feel like warmer weather than sipping on a delicious and refreshing drink.
I created the Sorrel Tonic Refresher Mocktail with everybody in mind. By that, I mean this delightfully yummy drink is alcohol-free but has the feel and taste of a light, refreshing cocktail.
The foundation of this spritely sipper is the homemade sorrel-infused simple syrup I prepared in short order and with a few ingredients.
You will also find the fizz of tonic water, thin planks of cucumbers, and fresh pineapple in this tall liquid beauty.

The homemade sorrel-infused simple syrup is where the magic for this mocktail begins, and here are the ingredients:
How to make Sorrel Infused Simple Syrup
Ingredients:
- 1 cup alkaline water
- 1 cup raw sugar
- 5-6 sorrel leaves, rinsed in warm water and torn apart
- 1/2 cup of fresh-cut pineapple chunks
- 1/2 tbsp whole cloves
- 2 cinnamon sticks
- zest from a navel orange (1-2 teaspoons)
- a pinch of sea salt (optional)
Directions:
- Into a small stockpot over medium-high heat, add 1 cup of alkaline water and 1 cup of raw sugar.
- Add several washed sorrel leaves torn into pieces, a couple of wedges of fresh-cut pineapple, whole cloves, cinnamon sticks, and orange zest.
- Bring the mixture to a roiling boil for two minutes, reduce to a simmer for 10-15 minutes. Then remove the pot from direct heat.
- Cover the pot with a tight-fitting lid, and allow the mixture to steep overnight for the best results.
- Strain through a fine-mesh sieve into a Mason jar, screw on the lid, and cool in the fridge until the Sorrel Infused Simple Syrup is thoroughly chilled. Use as needed.
- Store in the fridge for up to 30-days.
Add 1 or 2 tablespoons of the Sorrel Infused Simple Syrup to a glass over ice.
Next, top the mocktail off with your favorite tonic water. Using a long-handled bar-spoon, give the mocktail a few turns.

- tonic water, chilled
- cucumber, sliced
- fresh pineapple, cut into thin slabs

- This drink is built directly in the glass. Fill a Mojito glass 3/4 full with ice, add the sorrel-infused simple syrup, and top off with tonic water.
- Give the drink a couple of turns with a long-handled bar spoon.

When I saw the word sorrel, I originally thought it was our Caribbean sorrel, but it’s different. Still sounds delicious regardless. I have my own originally sorrel that I plan on posting soon as well.
