Preheat oven to 400 degrees
Prep the chicken wings by rinsing and patting them dry with paper towel.
Using a large butcher knife to divide the wings at the joint, and removing the tips and discarding them.
In a small saucepan, melt the butter over medium-low heat; once melted, add the extra virgin olive oil.
Arrange the chicken wings on a sheet pan lined with parchment paper or aluminum foil, brush them with the melted butter and olive oil mixture, and sprinkle liberally with sea salt and freshly cracked black peppercorns. Turn the wings over and repeat.
Place the wings on the center rack of 400 degrees preheated oven and bake for a total of 30-35 minutes. (Note: halfway through, turn the wings for even browning)
While the wings are baking, combine 1 cup of your favorite barbecue sauce with 1/2 cup of honey, mix well, and set aside.
Remove the wings from the oven and brush them with honey barbecue sauce.
Serve.
Note: to lock in the flavor, brush your favorite sauce, then return to the oven for about 10 minutes.
