Ingredients needed for this frozen lemonade slush summer mocktail
Watermelon. Start by slicing 5 cups of seeded watermelon into 1-inch-square chunks, then place them on a cookie sheet lined with parchment paper to prevent sticking. Freeze them overnight, or 2-3 hours ahead.
Blueberry simple syrup. I find that using a homemade blueberry simple syrup made with fresh blueberries is a great way to get the best flavor. And when you’re out looking for blueberries, be sure to look for sweet ones, like the blueberries from North Bay Produce.
Fresh lemon juice. Citrus or tonic water. To give this lemonade slush some flavor and balance out the watermelon and blueberries, we’re using freshly squeezed lemon juice and tonic water. Note: swap tonic for sparkling lemonade if you want it sweeter and more crowd-friendly
Garnish. For this slush recipe, we’re using slices of watermelon as a showstopping garnish. You could also look for Meyer lemons and use lemon slices as a garnish, too!
The combination of homemade blueberry simple syrup, fresh lemon juice, just-picked mint, and fizzy citrus tonic water makes this perfect drink one you will want to sip all summer long.
Blueberry Watermelon Lemonade Slush
Makes 4 servings
Ingredients:
- 5 cups frozen watermelon chunks (cut 1″x1″ watermelon chunks and place them on a cookie sheet lined with parchment paper, freeze them overnight or a few hours ahead)
- 1/2 cup blueberry simple syrup (recipe below)
- 2-3 tablespoons of fresh lemon
- 2 cups citrus or regular tonic water
- 4 large fresh mint leaves
- Watermelon wedges for garnish
- 1-2 cups of ice (optional if you want a thicker, frostier slush)
Directions:
- To a blender, add the frozen watermelon chunks, blueberry simple syrup, lemon juice, mint leaves, and blend in a blender (or food processor) until slushy.
- Fill a Tom Collins glass 3/4 full of the slush mix.
- Top with chilled citrus tonic water. Note: swap tonic for sparkling lemonade if you want it sweeter and more crowd-friendly
- Use a long-handled bar spoon and give the drink a few turns.
- Garnish with a wedge of watermelon and serve with a straw.
- Serve.
How to make Blueberry Simple Syrup
Ingredients:
- 1 cup of water
- 1 cup of sugar
- 1 cup of blueberries
Directions:
- Add a cup of water, a cup of sugar, and a cup of fresh blueberries to a small saucepan.
- Bring to a boil and stir for 3 minutes. Mash the berries with a fork, remove the pot from the heat, and cover with a tight-fitting lid.
- Allow the syrup to steep for 10 minutes
- Strain the syrup through a fine-mesh sieve into a mason jar, screw on the lid, and keep it in the fridge for up to two weeks.
Hosting Tip:
This slush goes fast—especially on a warm day. At the same time, the recipe makes about 4 servings, so plan for guests to come back for seconds.
For a party or backyard gathering, go ahead and double the batch so you’re not stuck blending more while everyone else is enjoying the moment.

Can you freeze watermelon?
Yes. You can freeze your watermelon to give it a nice texture for this slush.
Since watermelon is mostly water, it freezes up nicely and works perfectly for making slushes and mixed drinks.
How can I make my watermelon taste better?
The blueberry syrup in this drink will help sweeten the watermelon.
You will find that sugar makes it taste even sweeter.
Now you could add salt to watermelon if you are eating it. I love to add salt to watermelon.

What is tonic water?
Tonic water is very popular and is used to mix cocktails.
This carbonated water contains quinine, giving tonic water a bitter taste.
It is a sour aspect of a mixed cocktail.
There are so many great options when it comes to choosing a brand, so go for your favorite flavor and brand!
Is tonic water alcoholic?
Tonic water is not alcoholic. It is water that has a sour or bitter flavor.
You will find that you can drink tonic water over ice with a splash of lime for a refreshing non-alcoholic beverage.

Can I add alcohol to this lemonade slush?
Do you want to kick this party into overdrive?
Add an ounce and a half of premium Blanco rum or vodka to this lemon slush recipe, and you’re good to go.
Either way, it’s going to be a yummy good time. I’ll drink to that!
It will give it a nice kick, and you can add 1-2 shots per glass, depending on how much you want in terms of alcohol in your slush.

Ingredients
