Summer is just around the corner, and if you’re looking for a refreshing non-alcoholic mocktail to sip on, this pineapple drink should be on your list.
It’s made with pineapple chunks, simple syrup, an alcohol-free botanical spirit, cherry amaretto mix, and Q Mixers’ new REFRESHERS.
We topped this beautiful mocktail with fresh pomegranate seeds and a sprig of fresh mint.

Recently, we had a game night, filled with meat & cheeses and little nibbles, and this pineapple mocktail was a hit.

What You Will Need:
Pineapple Chunks. Muddled fresh pineapple brings natural sweetness and a bright, tropical flavor that sets the tone for this mocktail.
Simple Syrup. A touch of simple syrup helps balance the tart and fruity elements, giving the drink a smooth, lightly sweet finish.
Cherry Amaretto Spritz Mix. This adds a subtle cherry flavor with a hint of almond-like depth, giving the drink a unique twist without overpowering it. This mix reminds me of our Cool Off With A Dirty Coke Drink ” recipe.
We found this spritz mix at Williams-Sonoma.
Alcohol-Free Botanical Spirit. We used CeroCero Rhubarb, Ginger & Sea Buckthorn for a layered, slightly spiced flavor that mimics the complexity of a traditional cocktail.
Q Mixers Pineapple Passion Refresher. Q Mixers Pineapple Passion Refresher brings bold tropical flavor with a refreshing fizz, tying everything together.
Pomegranate Seeds. These add a pop of color and a subtle burst of sweetness for garnish.

How To Make This Pineapple Mocktail
1 serving
Ingredients:
- 1-2 chunks of pineapple, muddled
- 1 ounce simple syrup
- 1 ounce cherry amaretto spritz mix
- 2 ounces alcohol-free botanical spirit
- top with Q PINEAPPLE PASSION REFRESHER
- Garnish with pomegranate seeds and a sprig of fresh mint
- ice
Directions:
1. Into a standard rocks glass, add 1-2 pineapple chunks and, using a muddler, break them apart to express the juices.
2. Add the 1 ounce simple syrup and 1 ounce cherry amaretto spritz mix.
3. Next, add the crushed ice and 2 ounces alcohol-free botanical spirit(I used Cerocero Rhubard, Ginger & Sea Buckthorn), and top with Q mixer pineapple passion refresher. Stir the drink.
4. Garnish with pomegranate seeds and a sprig of fresh mint.
5. Serve.

Can I Make This Mocktail Ahead Of Time?
You can prepare parts of it ahead of time, like muddling the pineapple and mixing the syrup and cherry amaretto spritz.
However, you will want to wait to add the ice and Q Mixers Pineapple Passion Refresher until right before serving, so they stay fresh and not diluted by the ice.
What Can I Use Instead Of A Botanical Spirit?
If you don’t have an alcohol-free botanical spirit, you can substitute it with coconut water, white grape juice, or even a splash of ginger beer for a different flavor twist.
Can I Turn This Into A Cocktail?

What’s The Best Way To Serve This For A Crowd?
Scale up the base ingredients in a pitcher (without the ice and refresher), then pour over ice and top each glass with the refresher to keep each glass bubbly and fresh.

6–8 servings, depending on how generously you pour
- In a large pitcher, add 1 to 1 ½ cups of fresh pineapple chunks and muddle them well to release all that juice. You want flavor, not big chunks floating around.
- Next, pour in:, ½ cup simple syrup, ½ cup cherry amaretto spritz mix and 1 cup alcohol-free botanical spirit.
- Give everything a good stir and let it sit for about 10–15 minutes if you have time. This lets the pineapple really do its thing.
- When you’re ready to serve, fill glasses with ice, pour the mixture about ¾ of the way full, then top each glass with Q Mixers Pineapple Passion Refresher.
- Finish with pomegranate seeds and a fresh mint sprig.
Hosting Tip:
Do not add the refresher to the pitcher in advance.
Keep it separate and top each glass right before serving so every drink hits as it should.
